Zucchini and Tomato Side Dish

Delicious, easy, and quick to make, this recipe utilizes "too many zucchini and tomatoes" during the height of the summer growing season. I started making this in 1977 when I had an overabundance of both vegetables and it is now a family favorite. We can't wait for the arrival of summer.

Ingredients

  • 4-6 sm. tender zucchini, sliced about 1/4-in. thick
  • 1 med. onion, sliced about 1/4-in. thick
  • 2 Tbs. butter
  • 2 garlic cloves, minced
  • 1 tsp. oregano
  • 2-3 fresh tomatoes, sliced
  • Parmesan cheese to taste

Directions

Melt the butter in a large skillet, add the sliced zucchini, sliced onions, garlic, and oregano. Cook until tender. Add the tomatoes and cook until tender. Sprinkle with Parmesan. Let sit for a few minutes until cheese softens from the heat of the vegetables. Serve while hot as a side- it is also quite good cold.
