Zucchini and Tomato Side Dish

Ingredients
- 4-6 sm. tender zucchini, sliced about 1/4-in. thick
- 1 med. onion, sliced about 1/4-in. thick
- 2 Tbs. butter
- 2 garlic cloves, minced
- 1 tsp. oregano
- 2-3 fresh tomatoes, sliced
- Parmesan cheese to taste
Directions
Melt the butter in a large skillet, add the sliced zucchini, sliced onions, garlic, and oregano. Cook until tender. Add the tomatoes and cook until tender. Sprinkle with Parmesan. Let sit for a few minutes until cheese softens from the heat of the vegetables. Serve while hot as a side- it is also quite good cold.
