  • 1 zucchini, sliced
  • 1 c. of mozzarella cheese
  • 1 c. of cheddar cheese
  • 1 c. of walnuts, crushed
  • 1 c. of milk
  • 3 eggs, beaten
  • 2 c. of cheddar cheese
  • salt and pepper
  • 0.5 c. of cilantro

In a mixing bowl, mix milk with eggs, cheese, salt and pepper thoroughly. Pour the mixture in a buttered deep baking dish accurately. Arrange zucchini slice on top of the casserole, and top with cilantro. Spread mozzarella and cheddar cheese evenly over the top and sprinkle with walnuts evenly. Bake at 350 degrees for 30 minutes. Serve immediately.
