  • 1 1/2 cups of all-purpose flour
  • 1 1/2 teaspoons of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of ground cinnamon
  • 2 large eggs
  • 1 1/4 cups of sugar
  • 1/3 a cup of canola oil
  • 1 teaspoon of vanilla extract
  • 1 cup of shredded zucchini
  • 1/2 cup chopped walnuts
  • ½ a cup of dried cranberries
  • ½ a cup of dried raisins

Preheat the oven to 350 degrees. Then, lightly spray an 8- x 4-inch loaf pan with vegetable cooking spray.
In a bowl, add the flour, baking powder, soda, salt and cinnamon and set aside.
In a separate bowl, beat the eggs and sugar on medium speed with an electric mixer for 5 minutes. Add the oil, vanilla and beat at medium speed 1 minute or until blended. Then add the flour mixture and beat at low speed just until blended. Stir in the zucchini, cranberries, raisins and walnuts. Finally, spoon batter into the prepared pan.
Bake the batter for 40 minutes or until cake tester inserted in the center comes out clean. Cool the bread in the pan on a wire rack for 10 minutes and remove from pan and cool on a wire rack. Then serve!
