Zucchini Casserole Imperial
Ingredients
- 4 C. sliced zucchini
- 2 C. boiling water
- 2 eggs
- 1 C. mayonnaise
- 1 onion, chopped
- 1/4 C. chopped green pepper
- 1 C. grated Parmesan cheese
- Salt & pepper to taste
- 1 Tbs. of butter or margarine
- 2 Tbs. buttered breadcrumbs
Directions
Cook zucchini in water until just tender; drain. In large bowl beat eggs, stir in mayonnaise, onion, green pepper, cheese, salt & pepper, add zucchini. Turn into greased 1.5 qt. baking dish. Dot with butter and sprinkle with bread crumbs. Bake at 350 degrees for 30 minutes or until bubbly. Enjoy!
