Zucchini Cookies

Zucchini Cookies

Zucchini and butterscotch make an interesting pair in this out-of-the-ordinary cookie.

Ingredients

  • 1/2 C. butter, softened
  • 1 C. brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 C. flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1 small zucchini, shredded
  • 1 C. oatmeal
  • 3/4 C. finely chopped nuts
  • 1/2 C. coconut
  • 1/2 C. raisins
  • 1 C. butterscotch chips

Directions

Preheat oven to 350 degrees. Cream the butter and sugar. Add the egg and vanilla and beat well. Sift the flour, baking soda, baking powder and salt together, and mix into the egg mixture. Add the shredded zucchini. Stir in all remaining ingredients. Drop by tsp. onto a greased cookie sheet. Bake at 350 degrees for 12 - 14 minutes or until cooked. Cool slightly before removing from pan.
