- 4 large zucchini, washed and unpeeled
- 1 C. mayonnaise
- 1 C. Parmesan
- 1/2 sliced green onion
Cut ends off zucchini and slice into 1 inch thick (no thinner) rounds. Place in cooking pan, slice side down.
In bowl, mix remaining ingredients. Place a tablespoonful of ingredients on top of each slice. Place under broiler or on barbecue until cheese is bubbly and golden. Eat immediately.
