  • 1 ½ pounds grated zucchini
  • ¼ cup flour
  • 1 beaten egg
  • ¼ cup grated parmesan cheese
  • 2 minced garlic cloves
  • 2 tablespoons olive oil
  • Salt and pepper

Sprinkle the zucchini with 1 teaspoon salt and toss in a colander. Drain the zucchini in the sink for 10 minutes and then squeeze the zucchini with a cheesecloth or light cloth to drain the zucchini of moisture. Combine the flour, cheese, garlic, and egg in a bowl. Season with salt and pepper and mix. Then stir in the zucchini. In a skillet over medium-high heat, add the olive oil and then fry a tablespoon of zucchini batter at a time for 2 minutes per side.
