  • 1 1/2 pound zucchini
  • 1 tsp. salt
  • 1/4 cup flour
  • 2 cloves garlic
  • 1 large egg
  • 1 cup mushrooms of choice
  • 2 Tbsp. olive oil

Grate the zucchini and rinse. In a large bowl, combine the zucchini with flour, garlic and egg. Heat oil in a skillet. Scoop the batter, one at a time, into the skillet and cook. In a separate skillet, begin sautéing mushrooms until thoroughly cooked.
