Zucchini Jelly

Another use for all that zucchini you have left in your garden.

Ingredients

  • 6 C. coarsely grated, peeled zucchini
  • 6 C. sugar
  • 1/2 C. lemon juice
  • 1 can crushed pineapple, drained
  • 2 3 oz. boxes Jell-O, any flavor

Directions

In large pot, cook zucchini 15-20 minutes or until tender. Do not add water! Add sugar, lemon juice and pineapple. Boil 6 minutes more. Remove from heat and add jello. Stir till dissolved. Pour into sterile jelly jars and refrigerate.
