Zucchini Jelly

Ingredients
- 6 C. coarsely grated, peeled zucchini
- 6 C. sugar
- 1/2 C. lemon juice
- 1 can crushed pineapple, drained
- 2 3 oz. boxes Jell-O, any flavor
Directions
In large pot, cook zucchini 15-20 minutes or until tender. Do not add water! Add sugar, lemon juice and pineapple. Boil 6 minutes more. Remove from heat and add jello. Stir till dissolved. Pour into sterile jelly jars and refrigerate.
