  • 2 Zucchinis
  • 1 T. Olive oil
  • For the pesto sauce:
  • 2/3 C. packed coarsely chopped Basil leaves
  • 1/3 C. grated Parmesan cheese
  • 1/3 C. Olive oil
  • 2 T. Pine nuts
  • 1/2 tsp. of Salt
  • 1/8 tsp. black pepper
  • 1 Garlic clove

Using a potato peeler, peel zucchinis into long thin strips keeping the outer green coating. Heat a medium sized skillet, add zucchini and olive oil into the pan, and cook for 2 to 3 minutes. For pesto sauce, place all ingredients in a blender. Cover and blend in high speed until uniform consistency is reached. Combine zucchini noodles and sauce then serve!
