Zucchini Nut Loaf
Ingredients
- 1-1/2 C. flour
- 1 tsp. cinnamon
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/4 tsp. baking powder
- 1 egg
- 3/4 C. sugar
- 1/3 C. vegetable oil
- 2 Tbs. milk
- 1 C. zucchini, shredded (unpeeled)
- 1/2 C. walnuts, chopped
Directions
In a large bowl, combine flour, cinnamon, baking soda, salt, nutmeg and baking powder. In a medium bowl, beat egg; whisk in sugar, oil and milk. Stir in zucchini and nuts. Stir zucchini mixture into dry ingredients. Pour batter into greased 8" x 4" loaf pan. Bake in a 350 -degree oven for 50 minutes. Cool for 10 minutes in pan. Turn out onto rack to cool completely.
