Zucchini Pie

Zucchini Pie

This is a great pie which includes zucchini, onion, cheeses and bacon.

Ingredients

  • 3 C. chopped zucchini (unpeeled)
  • 1 large onion
  • 1/2 C. parmesan cheese
  • 1/2 C. grated cheddar cheese
  • 1/4 C. oil
  • 3 Tbs. minced parsley
  • salt and pepper to taste
  • 4 eggs
  • 1 C. Bisquick
  • 4 slices bacon (optional)

Directions

Chop and sauté the onion. Fry and crumble the bacon. Mix all ingredients together and pour into a 10-inch pie pan. Bake at 350 degrees for 45 minutes or until golden brown. Serve warm or cold.

  • This recipe was a hit with my family and they don't usually eat Zucchini. I did however make a few minor changes. First I didn't saute the onions, I just chopped them up and added them to the mix. I cut back a little on the bisquick and used 3/4 of a cup instead of a1 cup, since I felt it was just a little too doughy the first time. The recipe says the bacon is optional, but I think it definetly adds some good flavor so I used it, but increased the slices of cooked crumbled bacon to six slices. I also sprayed my pie plate with Pam before baking the pie, since the first time it kind of stuck to the pie plate, Other than that, like I said it really is good and definetly worth trying!

  • There is no liquid in this recipe. Should there be milk instead of oil?
