Zucchini Pizza Casserole

Ingredients
- 4 C. shredded unpeeled zucchini
- 1/2 tsp. salt
- 2 eggs
- 1/2 C. grated parmeasan cheese
- 1 C. (4 oz.) shredded cheddar cheese, divided
- 2 C. (8 oz.) shredded mozzarella cheese, divided
- 1 lb. ground beef
- 1/2 C. chopped onion
- 1 15 oz. can tomato sauce
- 1/4 tsp. dried oregano
- 1/4 tsp. dried basil
Directions
Place zucchini in a strainer; sprinkle with salt. Let drain for 15 minutes. Squeeze out excess moisture. Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheeses. Press into a greased 13x9x2-inch baking dish. Bake at 400 degrees for 20 minutes. Brown ground beef with onion. Add tomato sauce. Pour over baked zucchini. Top with rest of cheeses. Bake for an additional 20 minutes.
