Zucchini Pizza Casserole

This recipe should have been called Zucchini Lasagna casserole, because it tastes more like lasagna than pizza I think. I can't remember where I found this recipe.

  • 4 C. shredded unpeeled zucchini
  • 1/2 tsp. salt
  • 2 eggs
  • 1/2 C. grated parmeasan cheese
  • 1 C. (4 oz.) shredded cheddar cheese, divided
  • 2 C. (8 oz.) shredded mozzarella cheese, divided
  • 1 lb. ground beef
  • 1/2 C. chopped onion
  • 1 15 oz. can tomato sauce
  • 1/4 tsp. dried oregano
  • 1/4 tsp. dried basil

Place zucchini in a strainer; sprinkle with salt. Let drain for 15 minutes. Squeeze out excess moisture. Combine zucchini with eggs, parmesan cheese, and half of the cheddar and mozzarella cheeses. Press into a greased 13x9x2-inch baking dish. Bake at 400 degreesĀ for 20 minutes. Brown ground beef with onion. Add tomato sauce. Pour over baked zucchini. Top with rest of cheeses. Bake for an additional 20 minutes.

  • You were not kidding about it being similar to lasagna. This is better than I ever imagined and I made it exactly as directed. This is a keeper for sure and is going into my favorite recipes file. LOVE IT !!!!! you just have to taste this!!
