Ingredients

  • 10 C. chopped zucchini
  • 4 C. chopped onions
  • 2 green peppers, chopped
  • 5 Tbs. salt
  • 2 1/2 C. vinegar
  • 5 C. sugar
  • 1 Tbs. dry mustard
  • 1/4 tsp. pepper
  • 2 1/2 tsp. turmeric
  • 2 Tbs. cornstarch
  • 2 tsp. celery seed
  • 2 tsp. mustard seed

Grind zucchini, onions and peppers. Combine with salt and let stand overnight. In the morning, rinse in cold water and drain well, squeezing out all the water. Place in a large pan with remaining ingredients. Bring to a boil and cook 30 minutes, stirring often. Put in sterilized jars and seal.

Makes 6 pints.
