  • 1 lb. sm. zucchini
  • 2 Tbs. butter
  • 1 sm. onion, finely chopped
  • salt
  • pepper
  • 3 Tbs. chopped parsley

Scrub zucchini clean with a brush under water. Trim off ends. Cut into 1/8-inc slices. In a medium skillet over medium-low heat, melt butter. Add onion and cook for 5 minutes or until softened. Add zucchini and toss to coat with the butter. Cover and cook 5 minutes. Add salt and pepper to taste. Add parsley. Toss well and serve.
