Zucchini Soup

This soup is unbelievably delicious. It looks like split-pea soup, but it’s better!

Ingredients

  • 3 lbs. zucchini
  • 4 slices bacon
  • 1 can chicken broth
  • salt
  • 1 med. onion, quartered
  • 1 garlic clove
  • 3 C. water
  • pepper

Directions

Place broth and water in soup pot. Cut zucchini in chunks and add to broth. Cut bacon into 2-inch pieces and add with remaining ingredients. Boil until all are tender, about 45 minutes. Place in blender and blend until smooth. Can be served hot or cold.
