Zucchini Soup
Ingredients
- 3 lbs. zucchini
- 4 slices bacon
- 1 can chicken broth
- salt
- 1 med. onion, quartered
- 1 garlic clove
- 3 C. water
- pepper
Directions
Place broth and water in soup pot. Cut zucchini in chunks and add to broth. Cut bacon into 2-inch pieces and add with remaining ingredients. Boil until all are tender, about 45 minutes. Place in blender and blend until smooth. Can be served hot or cold.
