Zucchini Tomato Vegetable Packet

This grilled packet is the perfect way to prepare a side of great-tasting vegetables for any meal.

Ingredients

  • 1 sheet (18x24-inches) Reynolds Wrap® Heavy Duty Aluminum Foil
  • 2 small zucchini, sliced
  • 1 medium onion, sliced
  • 1 large tomato, cut in chunks
  • 1 Tbs. olive oil or vegetable oil
  • 3/4 tsp. lemon pepper seasoning
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt

Directions

Preheat oven to 450°F or grill to medium-high. Center vegetables on sheet of Reynolds Wrap Heavy Duty Aluminum Foil. Drizzle with oil. Sprinkle with seasonings. Bring up foil sides. Double fold top and ends to seal making one large packet, leaving room for heat circulation inside. Bake 20 to 25 minutes on a cookie sheet in oven or grill 12 to 14 minutes in covered grill.

Yield: 4-6 Servings
