Apple-Sugar Muffins

Corn flakes give these muffins and extra crunch that goes well with the chewy apple texture.

  • 4 Tbs. shortening
  • 1/2 C. granulated sugar
  • 1 egg, beaten
  • 1 C. milk
  • 1 C. apple, peeled and chopped
  • 1 tsp. of cinnamon
  • 2 C. all purpose flour
  • 3 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 Tbs. granulated sugar
  • 1 C. crushed corn flakes

Cream shortening and sugar. Add well-beaten egg. Sift flour, add baking powder, salt and 1/2 tsp. of cinnamon; sift again. Add dry ingredients to creamed ingredients, alternating with milk. Stir just enough to mix ingredients until moistened. Fold in chopped apples and corn flakes. Drop into greased muffin tins, filling 2/3 full. Mix 2 Tbs. sugar with 1/2 tsp. cinnamon. Sprinkle over muffin tops. Bake at 400 degrees for 25 minutes. Serve warm.

Yield: 12-15 muffins
