Turn Up the Turnips

The turnip is one of the vegetables I would always walk past in the grocery store and never buy. Recently, I started transitioning to a plant-based diet, so I wanted to start getting out of my comfort zone with produce. Last time I went grocery shopping, I bought a bag of turnips and haven’t looked back since. They’re incredibly versatile, easy to work with, delicious, and nutritious. Keep reading for some of my favorite turnip recipes!

Turnip Cole Slaw with Apples: The combination of turnip and apple is really a match made in heaven. The slightly bitter taste of turnips and tart sweetness of the green apples really bring the flavors together. Tie the flavors together with a simple mayonnaise dressing, and it’s ideal for a spring or summer side dish!

Turkey, Lentil, and Orzo Soup with Turnips: “When I came up with the idea for this soup...I thought it was a crazy combination but it turned out so good and heartwarming!” 

Roast Rack of Pork with Mustard Greens, Baby Turnips, and Pomegranate Sauce: Culinary wizard Wolfgang Puck shared this recipe with us. “The time is long overdue to welcome pork back to a proud place on our tables. Not only is it delicious, economical, and versatile, but it is also so different!”

Asian Style Turnips with Ginger, Chives, and Garlic: This recipe really packs a health punch in every bite! The turnips are marinated in a delicious mixture and garnished with sesame seeds.  

Good Ol’ U.S.A. Pork Stew: Can a pork stew be patriotic? I guess, according to this recipe. It’s delicious, and features turnips, sweet potatoes, and apples. 

Roasted Root Vegetable Medley: Wolfgang Puck clearly likes turnips, and so do I, so I thought I’d share another one of his recipes. “In winter, while I was growing up in the Austrian village of St. Veit, green vegetables never appeared in my mother’s kitchen.
