You can level up a standard cookie by turning it into a little sandwich! These almond cookies are chewy while the fudge is sweet, complimenting each other perfectly.

  • 2 cups of flour
  • 1 cup of butter, room temperature
  • ¼ cup of sugar
  • ¼ cup of almonds, finely chopped
  • 1 teaspoon of almond extract
  • ½ teaspoon of vanilla extract
  • Pinch of salt
  • 2 cups of chocolate chips
  • 1 cup of evaporated milk
  • ¼ cup of sugar
  • Pinch of salt

For the cookies:
As the oven preheats to 350 degrees, cream the butter and sugar together. Then, sift in the flour, sugar, and salt while continuing to mix. Lastly, stir in the almonds, vanilla extract, and almond extract. Spoon the cookie batter into equal sized circles that are spaced two inches apart. Let bake for 15 minutes, then set aside to cool before filling.

For the filling:
As the cookies bake, bring the evaporated milk to a boil over high heat. Remove the pan from heat, then slowly stir in the chocolate, sugar, vanilla, and salt until well blended. Spoon at least a tablespoon of fudge between two cookies, press together and place aside to set.
