  • 1/2 C. ground almonds
  • 1 tsp. fresh parsley, minced
  • 1/2 tsp. seafood seasoning
  • 3 Tbs. all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 lb. fresh catfish
  • 1 egg white
  • 2 Tbs. almond oil, divided
  • 1 lemon, cut into wedges

Mix almonds, parsley, seafood seasoning, flour, salt and pepper in bowl. Coat catfish in egg white. Then dip in almond mixture and lay on platter. Heat oil in skillet and grill catfish over medium heat in batches. Cook for 3 to 4 minutes and turn once. Continue cooking until pink and golden. Serve catfish with lemon wedges.
