  • 1/4 C. Panko
  • 1/2 tsp. ground coriander
  • 1/4 tsp. ground cumin
  • 4 salmon fillets
  • 3 tsp. lemon juice
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • 4 lemon wedges

Preheat the oven to 500 degrees. Combine the almond meal, Panko, coriander, and cumin in a shallow dish. Brush the fish with lemon juice and season with salt and pepper. Dredge the fish in the almond mixture and place in a broiler pan. Bake for 15 minutes until fish flakes easily and serve with lemon wedges.
