Apple-Bacon Breakfast Bagel

This is a relatively quick breakfast that is protein-rich and delicious.

  • 1 medium apple, cored and cut into 16 wedges
  • 1 tsp. light brown sugar
  • 4 Tbs. light cream cheese
  • 2 plain, egg or cheese bagels, split and toasted
  • 4 thin slices Canadian bacon

Preheat oven to 425 degrees. Heat a skillet coated with cooking spray over medium heat. Sauté the apple slices and brown sugar for 3-4 minutes until the apple is just softened. Spread 1 Tbs. of cream cheese on each bagel half. Top with one slice Canadian bacon and 4 of the apple wedges. Place the topped bagel halves on a baking sheet and bake for 6-8 minutes until bagel and bacon are heated through. Serve warm.
