  • 1 C. flour
  • 1 1/2 C. sugar
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 6 Tbs. very cold butter
  • 1 tsp. vanilla
  • 1/4 C. boiling water
  • 2 Tbs. cornstarch
  • 1/4 C. cold water
  • 1 Tbs. lemon juice
  • 4 C. apple pie filling (alternatively, use 5 C. fresh apples)

Warm oven to 400 degrees. In a food processor, grind the flour, 1/2 cup sugar, baking powder, and salt. Add vanilla. Pulse butter into the mixture until it has the size of peas. Pour in 1/4 cup boiling water just until mixture is just damp. In a separate bowl, dissolve the cornstarch in the cold water. Mix in remaining 1 cup sugar, lemon juice, and apple pie filling or apples. Transfer to a cast iron skillet. Roll the dough into an even sheet and lay across the top of the skillet. Bake for 45 minutes in the oven, until dough is golden brown and the oven is fragrant.
