  • 1 Tbs. butter
  • 6 McIntosh apples, peeled, cored, and cut into 1/2-in. pieces
  • 4 C. cooked white rice, cooled to room temperature
  • 1 1/4 C. sugar, divided
  • 3 eggs, well beaten
  • 1/2 tsp. ground cinnamon
  • 13/4 tsp. vanilla, divided
  • 1 C. sour cream

Preheat oven to 350 degrees.  In a warm oven, melt butter in a 9x13 inch glass baking dish.  In a medium bowl, combine rice, 3/4 cup sugar, eggs, cinnamon, and 1 1/2 teaspoons vanilla. Stir to mix well. Fold in apples.  Spread mixture evenly in a prepared dish.  Bake 25-30 minutes. Cool. 

To make sauce: In a small bowl, combine sour cream, 1/2 cup sugar, and 1/4 teaspoon vanilla.  Spoon cold sauce on warmed apple rice dessert.  Sprinkle with additional cinnamon and serve.
