These fruitful delights are a classic with tea or coffee. Splitting them in half and adding jam is a great idea too, but on their own these scones are scrumptious!

  • 1 C. apricot, dried
  • 2 C. all-purpose flour
  • ¼ C. sugar
  • 1 Tbs.. baking powder
  • ½ Tbs. baking soda
  • ½ Tbs. salt
  • 6 Tbs. butter
  • 1 egg
  • ¾ C. yogurt, plain
  • 3 Tbs. orange juice
  • ½ Tbs. vanilla extract
  • For glaze
  • 1 C. sugar
  • 3 Tbs. milk
  • ½ Tbs. vanilla extract

Preheat over to 375 degrees Fahrenheit
Rehydrate apricot in hot water for 10 minutes and pat dry
Whisk the flour, sugar, baking soda, baking powder and salt in a bowl
Add butter using your pastry cutter or your hands into the mix
And add the apricot and combine
Whisk together in a separate bowl the egg, yogurt, orange juice and vanilla
Combine the two mixtures until just incorporated
Drop 1/2-cup measures of the dough in a floured baking sheet and bake for 25 minutes
Whisk together the glaze ingredients and drizzle on each scone Let the scones cool for 15 minutes
