Fresh apricot pudding with whole apricots is a fruit dish you must try.

  • 1/2 lb. dried apricots
  • 3/4 C. sugar
  • 6 egg whites
  • 2 C. vanilla sauce
  • 1/3 C. sugar scant
  • 1/4 C. whipped cream
  • Decoration:
  • 1 can (14 oz.) apricot halves
  • whipped cream

Rinse the fruit and boil until tender in a little water. Puree them and stir the mashed fruit with the sugar. Beat the egg whites and fold them in. Put the mixture in a round baking pan or a tube pan and boil in a water-bath in the oven, at 350F, for about 1 hour. Caramelize the sugar in an absolutely clean frying pan. Add the vanilla sauce and last fold in the whipped cream. This makes a sauce to go with the pudding. Un-mold the pudding, decorate with apricot halves and pipe out the cream in around the top. Serve preferably lukewarm.
