  • 1 carrot, peeled
  • 2 single chicken breast fillets
  • 3 cups water
  • 2 brown onions
  • 1 small red bell pepper, thinly diced
  • 1 tablespoons fresh Thai basil leaves
  • ½ cup coriander leaves
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 11 tablespoon toasted black sesame seeds
  • 1/3 cup vegetable oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar

In a saucepan, place water, chicken and onion over medium heat. Once boiled, reduce heat, drain the chicken and discard the onions. In a bowl, place the carrot and bell pepper and cover them with boiling water. Next, shred the chicken and place it with bell pepper, carrot and coriander. Combine the fish sauce, lime juice in a bowl before pouring over the salad.

For the dressing, whisk the oil, vinegar and soy sauce for a minute. Pour it over the salad and toss well before serving.
