This burger is perfect for vegetarians and non-vegetarians. A black bean burger makes a great addition to the grill. Add more toppings to go along with the avocado and cucumber slices recommended.

  • 1 C cooked brown rice
  • 1/2 Tbs. olive oil, plus more for cooking
  • 1/2 onion, finely diced
  • 1 Tbs. chili powder
  • 1 Tbs. cumin powder
  • 1 Tbs. smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • 1 1/2 C cooked black beans
  • 1/3 C bread crumbs
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • Green leaf lettuce, as needed
  • Shredded cheese, as needed
  • Buns, as needed

Follow cooking instructions for brown rice. Set aside when finished.

Heat up a skillet. Once hot, add oil and onion. Season with salt and pepper and sauté for 3 to 4 minutes, or until onion is soft. Remove from heat and set aside.

Mix together chili powder, cumin, smoked paprika, salt and pepper. Set aside.

Place cooked black beans in a bowl and mash. Add cooked rice, sautéed onion and bread crumbs and mix well until dough forms. Divide into 5 to 10 patties.

Heat a grill and cook until well browned.

Remove burgers from heat and add toppings. Serve warm.
