  • 4 cups quinoa
  • 4 cups shredded cooked chicken
  • 2 mini cucumbers
  • 2 avocados
  • 4 cups baby arugula
  • ½ cup pickled onions
  • 4 teaspoons toasted sesame seeds
  • Lemon Vinaigrette

Boil a pot of water and cook the quinoa for 15 minutes. Halve and slice the cucumber. Halve, pit, and slice the avocado. Toss chicken with the dressing. Divide the quinoa among serving bowls and top with chicken, cucumbers, avocados, baby arugula, and pickled onions. Drizzle dressing and sesame seeds over the bowls and serve.
