This fabulous Avocado Chicken Salad is a great light lunch you can enjoy time and time again! It is healthy and tastes amazing, sounds like the perfect meal to me!

  • 1 Tbs. olive oil
  • 1 tsp. sea salt
  • 1 Tbs. lemon juice
  • 1 C. shredded chicken
  • 1/4 C. cilantro
  • ½ C. pico de gallo
  • 1 avocado
  • 1 tomato, sliced
  • Pepper
  • lime juice, for garnish

Mix chicken, olive oil, salt, lemon juice, pico de gallo, and cilantro in a bowl. Allow to sit for at least 15 minutes.

On a cutting board, slice an avocado horizontally down the middle. Do not cut through the pit. Pull both halves away from the pit. Discard pit. Slice the halves again horizontally, creating 1/4 inch thick rings. Remove the skin from each ring.

On a serving dish, layer the avocado with small amounts of the chicken salad and the sliced tomato. Garnish with fresh lime juice.
