Avocado toast has been all the rage the past few years, and for good reason. Avocado is full of fatty acids while hard-boiled eggs are packed with protein. This is a tasty and quick breakfast for those trying to be fit on the go.

  • 1 avocado, slice and de-pitted
  • 2 slices of bread, toasted
  • 2 hard-boiled eggs
  • 1 bunch of arugula
  • 1 tablespoon of mayonnaise
  • 1 teaspoon of olive oil
  • ΒΌ teaspoon of smoked paprika
  • Salt and pepper to taste

To prepare the egg topping, take crumble two hard-boiled eggs into a bowl and mix with mayo, smoked paprika, salt, and pepper. Set mixture aside and scoop half of the avocado onto each slice of toasted bread. Top the toast with the egg mixture and serve with a handful of arugula.
