  • 1 dozen large egg whites, at room temperature
  • 4 Tbs. cold water
  • 1 tsp. cream of tarter
  • 1 tsp. vanilla
  • 1 C. cake flour
  • 1/2 tsp. salt
  • 5 Tbs. cocoa
  • 1/2 pint whipping cream
  • Sugar
  • Vanilla

Beat first 3 ingredients until mixture will hold soft peaks. Add 1 tsp. vanilla. Sift and measure 1 C. of cake flour. Sift dry ingredients of cake flour, sugar and salt and cocoa together 4 times, then fold carefully into egg mixture. Pour into angel food cake pan and cut through the bubbles with a knife. Place in lowest rack of oven at 325 degrees for 1 hour. After 1 hour, shut oven off, but leave in oven 10 minutes longer. Take out and put upside down on bottle to cool for an hour or so. Cover top of cake pan with foil and leave on cutting board over night. It ripens then and tastes better the next day. To make frosting, whip the cream, add a little sugar and vanilla in it. After cake sits overnight in the refrigerator, frost the cake and place in refrigerator to keep cold. Delicious!
