Who knew you could not only have pizza for breakfast but also make it healthy! This pizza is topped with antioxidant-rich spinach and peas and enhanced with a light, garlicky pesto sauce.

  • 1 package of instant yeast
  • 2 cups of warm water
  • 4 cups of all-purpose flour
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 4 eggs
  • ¼ pound of prosciutto, sliced
  • 1 cup of baby spinach
  • ½ cup of basil pesto
  • ¼ cup of fresh peas

As the oven preheats to 400 degrees, dissolve the yeast in the warm water for 5 minutes then add the flour, olive oil, and salt. Knead the dough until it forms a ball. Next, place the dough into a bowl, cover with a damp cloth and let the dough rise for 1 hour. Once the dough has risen, punch it down then roll into a circle. Place the flatbread onto a baking sheet then spread the pesto on top. Crack the eggs on top, then add the ham, spinach, and peas. Bake for 20 minutes, or until the peas are soft and the egg yolk is runny. Serve and enjoy!
