  • 5 ounces chopped bacon
  • 1 cup grated cheese
  • 1 ¼ cups flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ cup buttermilk
  • ½ teaspoon salt
  • 5 teaspoon sour cream
  • 2 tablespoon melted butter
  • 5 eggs

Preheat the oven to 350 degrees F. Spray a muffin tin with cooking spray. Fry the bacon in a pan over high heat. Drain on paper towels and set the bacon aside. Put the flour, baking powder, and soda into a mixing bowl and combine. Whisk one egg, the buttermilk, salt, melted butter, and sour cream in a separate bowl. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the bacon and put 3 tablespoons of the batter into the 4 muffin tin holes. Make a hole in the center of the batter. Crack an egg into each hole and put the rest of the batter over egg. Bake for 20 minutes. Cool for 5 minutes.
