  • 12 oz. mushrooms
  • 1 finely diced shallot
  • 2 Tbs. Olive oil
  • 1 Tbs. Unsalted butter
  • 1/2 tsp. Black pepper
  • Kosher salt
  • 2 Tbs. chopped parsley
  • 1 Tbs. chopped thyme
  • 4 Split hamburger buns
  • 4 slices Cheddar cheese
  • 2 Tbs. Canola oil
  • 1 1/2 lbs. Ground turkey

1) Heat the butter and olive oil in a sauce pan over medium heat and cook the mushrooms for 5 mins.
2) Add thyme, parsley, and the shallot; season with pepper and salt and cook for another 5 minutes, then remove from heat.
3) Divide the meat into 4 burgers. Season both sides of the burgers with salt and pepper. Top the burgers with cheese slices and cook with canola oil. Place the burgers on the bottom of the buns and top with mushrooms and chiptole ketchup. Cover with buns and serve with ketchup.
