  • 8 slices of bacon, cooked and chopped
  • 10 slices of bread, chopped
  • 4 eggs
  • 1½ cups milk
  • 4 tablespoons sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • 1 teaspoon butter, softened
  • 1 teaspoon cinnamon
  • maple syrup

Preheat the oven to 350F and grease a baking dish. Pour the bread into the dish and scatter the bacon on top. In a bowl, beat the eggs, milk, 2 tablespoons sugar, salt, vanilla and butter. Pour over the bacon and bread. In a small bowl, mix together the remaining sugar and cinnamon and then sprinkle on the casserole. Bake for 40-45 minutes, or until golden brown. Top with desired amount of maple syrup and serve.
