Fry thick slices of bacon and wrap them into rings to create adorable fried egg cups! Bake the eggs in the oven until the centers are set and serve with green onions on top.

  • 8 slices thick cut bacon
  • 8 large eggs
  • 3 sprigs thyme
  • 2 Tbsp. grated parmesan cheese
  • 3 Tbsp. chopped scallions
  • salt and pepper, to taste

Preheat the oven to 375 degrees. Fry the bacon for about 3 minutes in the skillet and drain on paper towels. Prepare a muffin pan with cooking spray and wrap the bacon on the inside of the cups. Make rings out of all the slices. Gently crack one egg in each bacon cup. Season with thyme, Parmesan, salt, and pepper. Bake for 15 minutes until the centers are set. Garnish with scallions and serve.
