Baked Alaska with Caramel Sauce is a layered ice cream dessert touched up with some class with the meringue topping. It is easier to make than it sounds and it will definitely amaze your guests. It requires some time to assemble, but it is worth the effort once you take a bite into this masterpiece.

  • For Cake:
  • 2/3 C. oil
  • 1 1/3 C. flour
  • 3/4 C. unsweetened cocoa
  • 1 tsp. baking soda
  • 4 eggs, divided
  • 1 1/2 pinch of salt
  • 2/3 C. brewed coffee
  • 1 tsp. vanilla
  • 2 qt. coffee ice cream
  • For Sauce:
  • 1/2 C. heavy cream
  • 2/3 C. bittersweet chocolate, chopped
  • 1/4 C. light corn syrup
  • 2 Tbs. dark rum
  • For Meringue:
  • 4 egg whites
  • 1/8 tsp. salt
  • 1 C. sugar
  • 1 tsp. vanilla

Preheat oven to 350 degrees
Prepare three, 9 inch pans
In large bowls, whisk flour, cocoa, baking powder, and baking soda
In separate bowl, whisk egg yolks, 1/2 cup sugar, and salt
Add oil, coffee, vanilla, and dry ingredients
With mixer, whisk egg whites on medium/high speed until peaks form
Add 1 cup sugar. Beat 3 to 4 minutes
Fold in egg whites
Spread batter into pans
Bake 16 to 18 minutes
Cool completely when finished
Assemble cake:
Line a 2 1/2 quart bowl with plastic wrap
Cut a 6 inch circle into one cake layer and an 8 inch circle into another
Place smallest layer at the bottom of the bowl
Place ice cream in mixer and beat on low until spreadable
Spread layer of ice cream over 6 inch cake
Top with 8 inch layer
Spread another ice cream layer
Top with final cake layer
Cover with plastic wrap and freeze 4+ hours
Make Sauce:
In large saucepan, boil heavy cream. Remove from heat
Add chocolate, syrup, and rum. Allow to sit five minutes
Whisk until smooth
Create meringue:
With mixer, beat egg whites and salt on medium/high speed until peaks form
Add sugar. Beat 2 minutes
Add vanilla. Beat 2 minutes more
Invert cake from freezer onto baking sheet
Spread meringue over the entire cake. Add a swirl design
Place into 500 degree oven
Bake 2 minutes to brown tips
Slice and serve with sauce
