This chicken enchilada recipe is sinfully wonderful. If you love cheese and chicken these chicken enchiladas are going to be your new favorite dish.

  • 2 lbs. chicken, cooked and shredded
  • ½ stick of butter
  • 1/3 C. half-and-half
  • 1 onion, sliced
  • 2 cans of diced green chilies
  • 6 oz. of cream cheese
  • 8 oz. shredded cheese
  • 1 jalapeno, thinly sliced
  • 10 flour tortillas

Melt the butter in a large skillet over a medium heat. Add in the sliced onions and let them sauté for 5-10 minutes. Remove them from the heat and mix in the chicken, chilies, and cream cheese. Divide the mixture evenly over the flour tortillas. Roll them and place them into a greased pan. Let them bake for 350 degrees for 35 minutes. Serve them immediately and garnish them with jalapenos, sour cream, salsa, olives or any of your favorite toppings!
