This baked cod will become a family favorite. With crunchy breadcrumbs, your fillet is tender and cooked to perfection time after time. The fried vegetables make a great side to this dish.

  • 6 cod fillets
  • Salt
  • Pepper
  • 1/2 C olive oil
  • 2 onions, chopped
  • 3 Tbs. minced garlic
  • 2 carrots, chopped
  • 1/4 C parsley
  • Lemon juice

Preheat the oven to 400 degrees.

Season cod with salt, pepper and a little lemon juice. Cool in fridge for an hour.

Cover cod with breadcrumbs on both sides.

Place cod on sheet pan and bake for 20 minutes, or until cooked through and golden brown.

Heat olive oil in a skillet. Cook chopped onion, garlic and carrots. Season with salt, pepper and parsley. Cook until carrots and onions are tender and start to brown.

Serve cod and vegetables together on a plate. Garnish fish with parsley and drizzle with additional lemon juice.
