  • 1 onion, chopped
  • 1 c. of mozzarella cheese
  • 1 c. of bread crumbs
  • 1 c. of mushrooms, chopped
  • 1 can of green peas
  • 1 carrot, peeled and chopped
  • 2 c. of celery, chopped
  • 1 tbsp of olive oil
  • 1 tbsp of balsamic vinegar
  • 1 tsp of oregano

Combine mushrooms, white onions, celery, carrots and green peas in a deep buttered bowl. Add olive oil, balsamic vinegar, pepper and salt. Mix thoroughly. Cook pasta according to the directions on the package, drain, and place in a buttered baking casserole, stir in the veggie mixture. Top with bread crumbs and mozzarella cheese. Season with oregano. Bake at 300 degrees for 20 minutes, and serve immediately.
