  • 4 Tbs. butter
  • 3/4 C. brown sugar
  • 4 C. bananas, sliced
  • 1 1/2 C. flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 3 Tbs. butter, softened
  • 7/8 C. sugar
  • 2 eggs
  • 1/2 tsp. vanilla extract
  • 1/2 C. low-fat milk
  • 1 tsp. cinnamon

Preheat your oven to 350 degrees F. Place 4 Tbs. of butter with brown sugar in 9-inch round pan. Slowly heat the cake pan on top of stove. Stir mixture until it turns into a caramel. Cool. Spread out the banana slices on top of the caramel. In a bowl, mix flour, baking powder, salt, cinnamon and nutmeg. Cream 3 Tbs. butter with sugar. Stir in vanilla. Add milk to flour mixture. Pour cake batter in pan. Bake for 30-35 minutes. Cool for at least 5 minutes before turning cake upisde down onto a serving dish. Garnish with remaining cinnamon.
