A sinful breakfast that is too good to resist… But it’s fine because it’s made with bananas and nuts, and most importantly, is delicious. And, hey, at least it’s dark chocolate!

  • 1 ½ cups of flour
  • ½ cup of brown sugar
  • ½ cup of vegetable oil
  • 2 ripe bananas, mashed
  • 2 eggs, beaten
  • ¼ cup of maple syrup
  • 2 teaspoons of vanilla extract
  • 2 teaspoons of baking soda
  • 1 teaspoon of nutmeg
  • ¼ cup of oats
  • ¼ cup of walnuts, chopped
  • ½ cup of pecans
  • 1 bar of your favorite dark chocolate, chopped
  • 2 tablespoons of granulated sugar
  • 1 tablespoon of butter

Preheat oven to 375 degrees Fahrenheit.
In a large bowl, combine oil, bananas, eggs, maple syrup and vanilla extract until smooth. Gradually fold in flour, then add brown sugar, baking soda and nutmeg; stir well. Scoop batter into greased muffin pan.
In a smaller bowl, prepare the crunch topping by combining oats, walnuts, pecans, chocolate, granulated sugar and butter. Sprinkle the topping on top of each muffin batter. Bake for 20 minutes until a toothpick poked in the middle comes out clean.
