  • 8 slices cinnamon bread, cubed
  • 8 eggs
  • 1 C. milk
  • 2 1/2 C. real maple syrup
  • 1 tsp. rum extract
  • 6 ripe bananas, sliced
  • 1 C. pecans, chopped

Grease the bottom of a 13x9 baking dish and arrange the cubes of bread in the bottom. In a bowl, combine the eggs, milk, and 1/2 C. maple syrup. Whisk to mix well then pour it over the bread. Cover and refrigerate at least 8 hours.

Preheat the oven to 350 degrees. Uncover and bake for 35 to 40 minutes, or until golden brown along the edges. Let it stand for 10 minutes before serving.

While the french toast is baking, microwave the remaining maple syrup for 1 to 2 minutes on high. Stir in the rum extract. Sprinkle the bananas and pecans over the bread and drizzle with maple syrup, if desired.
