  • 5 Tbs. butter
  • 1/4 C. flour
  • 1 qt. milk
  • 2 tsp. salt
  • 1/4 tsp. nutmeg, grated

Melt the butter in a large saucepan over medium heat. When it's melted, add the flour and stir until smooth. Continue stirring until the color is a light beige, about 7-8 minutes. 

Increase the heat a few notches and add the milk until it becomes thickened by the flour. Bring to a simmer, and reduce to medium low and continue simmering until the flour has softened and the mixture is no longer gritty, around 15 minutes. 

Season with salt and nutmeg to taste.
