Basic Fruit Bread

Do not confuse this with the dense Christmas bread with maraschino cherries. This recipe is simply a blueprint for making any quick bread with fruits or vegetables, from apple to rhubarb or from carrot to zucchini. Add any fruits, vegetables, nuts and spices that you desire to make a truly spectacular homemade loaf of sweet bread.


  • 3 C. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 C. white sugar
  • 1/2 C. vegetable oil
  • 2 eggs
  • 1 C. shredded apple
  • 3/4 C. chopped walnuts
  • 1/2 tsp. vanilla extract


Preheat oven to 350 degrees. Grease 1 4 1/2x8 1/2 inch loaf pan. Mix flour, baking powder, soda, salt, sugar, oil, eggs, fruit or vegetables, walnuts, spices, and vanilla only until dry ingredients are moistened. Bake in greased pan at 350 degrees for 35-40 minutes. Allow to cool slightly before serving.

Yield: 10 servingsĀ

  • I added 1 tsp of cinnamon and sprinkled sugar on top of unbaked loaves. Makes 3 mini loaves. Bake for 40 minutes. Delicious and so beautiful
