  • 2 C. cauliflower florets
  • 1 onion, sliced
  • 4 garlic cloves, unpeeled and chopped
  • ¼ C. olive oil
  • 1 tsp. rosemary
  • Salt and pepper to taste
  • ½ C. Parmesan cheese, grated

In a large bowl, combine cauliflower, onion and garlic. Pour in olive oil and season with rosemary, salt, and pepper. Toss until evenly coated. Pour all contents onto a rimmed baking sheet and bake for 40 minutes at 425 degrees. Toss cauliflower, sprinkle with Parmesan, and return to baking for an additional 10 minutes.
