I love to top this chili with shredded cheddar cheese and oyster crackers!

  • 2 lbs. lean beef chili meat
  • 1 lg. onion, finely chopped
  • one 10-oz. can chopped tomatoes with green chilies
  • 2 1/2 C. tomato juice
  • 2 Tbs. chili powder
  • 1 Tbs. ground cumin
  • 1 Tbs. minced garlic
  • one 15-oz. can pinto beans

In a large slow cooker, combine chili meat, onion, tomatoes, green chilies, tomato juice, chili powder, cumin, garlic, and 1 cup water. Mix well.  Cover and cook on low for 7-9 hours.  Add pinto or kidney beans and continue to cook another 30 minutes.
