You can’t go wrong with a variation of mac and cheese. And for any taco lover, this casserole is a best of both worlds.

  • ½ pound of ground beef
  • 8 oz. of macaroni, cooked with salt
  • ¾ cup of your favorite salsa
  • 1 cup of sour cream
  • 1 can of black beans
  • 2 tablespoons of garlic powder
  • 1 tablespoon of smoked paprika
  • 1 cup of Mexican blend cheese
  • handful of chopped green onions
  • sliced jalapeno pepper

Preheat oven to 350 degrees Fahrenheit.
Cook the ground beef in a pan over medium heat with taco seasoning. Drain the grease and let cool.
In a large bowl, mix together the cooked macaroni, salsa, sour cream and the cooked beef. Grease your pan, then add the pasta. Sprinkle a layer of cheese, then a layer of black beans. Cover with foil and bake for 20 minutes.
Top with green onions and jalapeno peppers, then serve with extra cheese on the side!
